I am a big salad person. I enjoy them generally once a day, especially in the warmer months. Which are nearly here by the way! We have been blessed with some peaks of early spring, and it is so glorious. This has me longing for all the spring foods. Spring greens, asparagus, spring onions, garlic scapes, fennel, and I could go on. All of this beautiful light produce begs for a rich savory dressing, that balance is just so satisfying. Spring produce aside even, I like to always have a quick homemade dressing on hand. Something that doesn’t overpower food but compliments it. That takes only a few minutes to make, and can be paired with nearly anything. This my friends, is The 4 Ingredient Dressing That Goes With Everything.

Seriously though, fellow salad lovers, what is your dressing situation? Do you always use the same thing, or do you switch it up every time?
I find myself getting into a kick of one dressing for awhile, and then totally switching years. Not surprisingly, I always make way more salads in spring and summer, so I tend to have more dressings on hand.
When I switched over to a real foods lifestyle, I struggled to adjust to the new dressing landscape. I always relied on bottled dressing growing up, and of course had favorites. I quickly found some quality Paleo products like the Primal Kitchen and Tessamae’s dressings.
Then I developed all these food intolerances and things changed yet again. Don’t you just love when that happens? However, as with most things, this ended up being a blessing in disguise.
When I had to give up many of the ingredients in even the healthier of bottled dressings, it forced me to make my own. And friends, making your own dressing is where it’s at. I know it seems like an extra step, and it is “easier” to purchase something pre-made. But let’s break this down and consider if this is really the case.
First let’s address how easy it is to make dressing. There is no cooking involved (or at least not in the dressings I am making). You typically only have a handful of ingredients, and they take mere minutes to prepare. Seriously, minutes. I am talking mix oil, acid, and flavorings.
Next, we have the flavor. Using fresh non processed ingredients always lends the best flavor. This goes for dressing and all cooking of course. Especially when you are making something simple, with few ingredients, quality makes a big difference. Let’s not forget about the flavor options with dressing too. You can add a sweet element to an otherwise savory meal with a balsamic vinaigrette. Or a bright freshness with citrus and herbs. Dressing can enhance your food and especially elevate salad.
Lastly, we have the cost savings. As much as I still love a good healthier bottled dressing, can we talk about how expensive they are? I mean, I can purchase a dinner portion of protein for the same amount. Don’t get me wrong, I keep some on hand just in case. But 9 times out 10 I choose to spend 5-10 minutes and make a big batch of salad dressing. It keeps well too, so you can easily get away with only making a batch once or twice a week.

Obviously it makes a great salad dressing. But I also use it as a sauce. It makes a great topping for asparagus, almost like a Vegan hollandaise.

The 4 Ingredient Dressing That Goes With Everything
Ingredients
- 1/4 cup hulled raw tahini or homemade
- Juice of 1 lemon
- 1/2 teaspoon sea salt
- 1/2-3/4 cup high-quality extra virgin olive oil
Instructions
- Add all ingredients to a mason jar, starting with 1/2 cup olive oil. Shake well, and add more oil to reach your desired consistency (I usually use scant 3/4 cup). Alternatively, blend with a hand blender to better incorporate ingredients. If using this as a sauce, blend with less olive oil.
- Dressing keeps for 5-7 days stored in an airtight container in the refrigerator.
