Welcome to the first in our new series! Seriously simple recipes are meant to be just how they sound. Easy to prepare, minimal ingredients, and on your plate in no time. We will also include plenty of customization and shortcut options too. Plan on adding them to your weekly rotation, just like we do.

Promise you will bear with us though, in the faith keeping things simple, we will not be including our usual multiple professionally edited photos. Instead, expect to find one photo shot and edited on an iPhone. How is that for simple?

Seriously Simple Recipe: Greens Eggs + Ham {Paleo + Whole30}

Let’s get to it then. Our first recipe in this series is something we often enjoy for breakfast and mix up with seasonal flavors and ingredients. We dub it green eggs and ham, because, well, the eggs are green. And, you get where I’m going with this.

Ham or pork shoulder roasts are on our monthly rotation, so we generally always have some leftovers lying around. This simple egg scramble is easy to throw together on a weeknight if you have a busy couple of days. Or, prepare it on the weekend for the entire family.

If you don’t have leftover roast, deli ham works just as well. In this case, we suggest cutting deli slices into cubes and adding it to the scramble.

A healthy protein packed breakfast is soon to be yours, in under 10 minutes. Pair this with a healthy carb (think sweet potato, squash, or green plantain) and you have a heck of a meal ahead.

And there you have it. Simple, right?

Seriously Simple Recipe: Green Eggs + Ham {Paleo + Whole30}

Ingredients
  

  • 2 servings pre-cooked spiral ham pork shoulder roast, or 4-6 slices chopped deli ham
  • 6 pastured eggs
  • 1/8 cup full fat coconut milk or whole milk
  • Salt and pepper
  • 1/4 cup packed fresh basil roughly chopped
  • 1/4 cup fresh parsley roughly chopped
  • 2 tablespoons fresh cilantro roughly chopped
  • 2 tablespoons fresh chives or green onion chopped
  • 1/4 cup frozen spinach
  • 2 tablespoons ghee melted
  • 2 garlic cloves minced

Instructions
 

  • In a medium bowl whisk eggs with milk and salt and pepper. Mix in all herbs. Add chopped deli ham if using.
  • Melt ghee in a medium sauté pan over medium heat. Add garlic and cook, stirring constantly, about 30 seconds. Add eggs and use a spatula to scramble mixture while it cooks.
  • Cook until eggs are done to your likeness, about 5 minutes. We prefer soft scrambled eggs and cook ours a little underdone.
  • Serve with a side of spiral ham or pork, if using.

Notes

*Depending on the time of year, sub the herbs used for whatever you have on hand. Dried herbs work too, but you will want to reduce the quantities since they have a stronger flavor.
**If you don't have pork on hand, or don't eat pork, sub with your favorite protein.
