Sweet Potato Toast 5 Ways {Paleo, Grain & Dairy Free}

Is anyone else a snacker? Both Garett and I like to graze, little nibbles here and there, always getting a taste of everything. Some days we may even eat only snacks for dinner. Don’t judge, you know you have done it too.

Even when we go out to eat, we prefer to order family-style and share with everyone at the table. Again, allowing us to sample every dish. You can imagine that tapas style restaurants are our jam, we are totally in our element there.

All of this considered, we are always looking for a new snacky. Avocado toast used to be a staple in our house, chips and dips are always welcome, we go through a lot of trail mix, and it doesn’t end there.

Ingredients of Savory Avocado Snack Toast

Since bread isn’t in my repertoire anymore, we turned to our trusty lineup of nutrient-dense Paleo starches to create new options.

Sweet Butter and Banana Toast

By thinking outside of the box, you can use various squashes as a replacement for their grain filled counterparts. Spiralized Zucchini makes a wonderful pasta and cut into boats it can hold up to any meat filling. Spaghetti squash is nature’s pasta, sweet potatoes can become croutons, and well you get the idea.

Sure, I will enjoy a Paleo bread every once it awhile. But truthfully they can be time-consuming to make, and even more expensive to purchase. However, I still celebrated the resurrection of my avocado toast obsession with Paleo bread.

And then, sweet potato toast swept the health circles. We love us some sweet potato and hopped on this trend immediately. Starting small and experimenting with the basics, smashed avocado and herbs for example, quickly led us to experiment with other toppings and combinations.

We became addicted to the flavor and texture that sweet potato adds to the mix. Each variety of sweet potato is a bit different, which makes things even more fun. Plus, let’s not forget the health factor sweet potato introduces.

Experts say to eat the rainbow, and it sure is easy when you have colorful snacks around.

These little veggie toasts are also extremely versatile, the options for toppings is literally limitless. Adjust to your taste, experiment and have fun with it.

Sweet Potato Toast 5 Ways {Paleo, Grain & Dairy Free}

A healthy variation of your favorite snack toast, with endless topping combinations. Both sweet and savory variations to suit everyone's tastes.

Ingredients
  

  • 1 large sweet potato sliced into 1/4 inch thin planks
  • Choice of toppings

Sweet Butter and Banana Toast

Sweet Butter and Granola Toast

  • 2 tablespoons creamy almond or sunflower butter
  • Small handful Paleo or traditional granola

Savory Fiesta Toast

  • 1/4 avocado sliced or mashed
  • Small handful cherry tomatoes sliced
  • 1 green onion sliced
  • 1 tablespoons cilantro roughly chopped
  • Squeeze of fresh lime juice

Savory Breakfast Toast

  • 1/4 avocado sliced or mashed
  • 1 poached egg
  • 2 pieces crispy bacon crumbled

Savory Avocado Snack Toast

  • 1/4 avocado sliced or mashed
  • 1 tablespoon crumbled goat cheese
  • Red pepper flakes to taste

Instructions
 

  • Place potato slices in toaster or convection oven, repeating until potato is softened and mostly cooked through. This takes about 10 minutes in a convection oven.
  • Add choice of toppings, and enjoy.

Notes

We encourage you to make substitutions and create your own combinations. Try other toppings and swap out the potato variety. Be sure to share your creations and tag us!
